3 Kings Cake (With Recipe)

We enjoyed a nice 3 Kings Day Celebration (a day late) with the Delgado's and I attempted my first King Cake. It turned out yummy!!! The plate was cleaned pretty quickly which made me happy. So I thought I would share the recipe.

I used the following ingredients

2 Tubes of Buttery Flaky Crescent Rolls (but any kind will do)
Butter Spray
Cinnamon Sugar (1/4 cup to 1 Tbsp Ratio)
1/2 can of Sugar Free Apple Pie Filling
1 8 oz package of 1/3 fat Cream Cheese Softened
1/4 cup sugar
1 tsp vanilla
Microwavable Glaze

Preheat oven to 350 degrees. Pull out your pizza pan. Grab 2 cans ofbutter flavored crescent rolls. Unroll all the triangles and place large end towards the outside, like making one of those Pampered Chef crescent roll rings. Spray with butter spray, forming a pretty circle. Sprinkle a generous amount of cinnamon and sugar. Mix softened cream cheese vanilla & 1/4 cup of sugar together till well combined. Spoon mixture about halfway towards center in a ring, then spoon pie filling on top of cream cheese filling. (If you have a plastic baby or nut to insert you can do so here.) Roll the large ends of the triangles over your filling making an oval of dough. Spritz with more butter and sprinkle with cinnamon sugar. You should have a large ring of dough. You don’t want a perfect circle, but more of an oval shape. Bake until golden brown all over. 17-20 min.

I cheated when it came to icing and used 1/2 bottle of microwavable glaze from the cake isle. A traditional New Orleans Style king Cake is topped with icing and then colored sugar. I moved mine to the platter b/4 adding the glaze. Moving to the platter is tricky, it took 2 spatulas and tipping the pizza pan to get it on the plate for me.

Tonya's Wedding

My sister Tonya was married in August and I had the distict pleasure and honor of being in the wedding as well as taking the pictures. I love you Tonya and but I will NOT be doing that again! It was fun but also incredibly stressful! I did love being part of and capturing her day. Tonya and I were both incredibly blessed to be made family through living with my Aunt Nancy and Uncle David. David gave us both away at our weddings. He is quite happy to have finished with the giving aways :)

He really is such a joy to me! I know it may seem silly but we do enjoy him so much. He makes me laugh and his excitement is contagious. One of these days I will snap a pic of him when he is "smiling". Whenever he gets really excited he looks like he is grinning from ear to ear and it is so funny!

Doggy Daycare

So we have been sending Paxton to Doggy Daycare 1-2 times per week. It gives him time to be outside and play, he gets to spend time with other dogs and he is really tired by the time I pick him up on my way home.

They love him there and he has such a blast! He is so excited when he sees me put the Kennel in the car in the mornings.

Oh and yes that is his FAVORITE FL GATOR toy (shhh don't tell my Oklahoma State Fan that it's his favorite but it really is!) hehe

5k #2

#2 in our monthly challenge that is. It doesn't count unless Jess and I both do it is what I have concluded. I am planning on doing a few more than just the 6 for our challenge because I am enjoying them so much and there are such great causes to support. Our Doggy 5k was in support of the American Cancer Society.

Our March 5k was to benefit the Fisher House. The Fisher House is similar to a Ronald McDonald House but it if for familys or injured or ill Military Members who are hospitalized.

Jess and I even got medals for finishing in the Top 10 of the Walkers. I was pretty excited that we improved on my time from last week and completed it in 45:33. YAY for us. We were trying to push ourselves and then it started raining in the last 3/4 of a mile. The rain and as well as not trying to let anyone pass us at the finish pushed us to get done quicker.

Pocket Granny started out in front of us, BUT we came into the finish line a few minutes before her. We seriously want to be like her when we grow up. She has done so many triathalons and does almost all of the local 5k's. She was in the doggy race last week and Paxton and I did pass her last week as well.

After the race, we were wet but SO glad that we finished and improved (MUCH) on our time from our first race this year (the 8K). We aren't sure exactly what our time was on the 8K but we were very close to the end of the race.

Paxton's First 5k

Paxton and I competed in a Doggy 5k last weekend and it was a great time... I wasn't sure if he would be up for it but he did such a great job and was quite the competitive little guy. He loves big dogs and walks right up to them. Now when it comes to dogs his own size that is another story. Scroll down to see a picture of how he responds. We ended up 2nd in our division for walkers with a time of 47:20.

It was a great experience for us both and I hope we can do more. I know there is one locally in October that includes dogs so I am sure we will sign up for that one for sure.

5K #1 (okay so it was an 8K)

So we have challenged ourselves to complete one 5k per month starting in February for at least 6 months.

So for our first we choose the Kiss Em to the Finish 5k... so on a chilly February morning Jess, Sonia and I went for it. Sonia ran and came in 3rd in her age division. (Show off) hehe just kidding, Sonia is more of a runner than I have ever been able to be.

Jess and I walked it and our goal was to complete it... and we did. Even though we were passed by an impressively in shape 80 year old that we affectionately referred to as "pocket granny".

This first race was a challenge to get more fit and get past that Holiday lethargy. I have been more pro-active in my exercise and Paxton and I have been taking many walks as the weather gets warmer. He is a great exercise partner!

7 Months In

:) I am a very blessed woman, I am the wife of a husband that when I ask him if something I am doing for sentimental reasons makes me silly he responds "no you are just being Kendra" He GETS this part of me, and that makes me feel very special. (And I think he secretly enjoys the sentimental stuffs). So there! For our 7 monthiversary I did one of these "silly" sentimental things and got a small cake and a #7 candle. It is important to celebrate the little moments. Right? So we ate cake and then watched a movie. Just a little peek into our exciting day, that really wasn't so exciting but special none the less.

Grandma Update

I spoke with my Grandma on Friday and she has an appointment to meet with a Surgeon later this week to get the process started for a double mastectomy. This is the best course of action due to family history, so they decided to be proactive. It seems that the cancer has not spread as of her latest scan in December. There will be biopsy's taken of surrounding lymph nodes during her surgery to confirm this but if that is the case then chemo will not be necessary. It seems to be a positive place to be and Grandma was in good spirits when I spoke with her. All of that makes me feel more at peace with everything. Thank you all for your prayers!

Her name is Nancy and these are 2 of her daughters Valerie is on the Left & Nancy Jean is on the right.

Isn't she beautiful! She is an amazing and strong woman. She turned 75 at the end of October but you wouldn't know it to be around her. I feel like she has always been young at heart. In early December she had a biopsy and it came back that she has Breast Cancer, today she will be going to a doctors appointment her first since her diagnosis. It would really mean a lot to me if you could take a moment today and say a prayer for her. That her doctors would have wisdom and that she will have peace in her appointment today.

We serve a mighty God who is able to do above and beyond anything we can think or imagine!

Doughnut Muffins

So I have gotten in the habit of turning on Food TV when I get home from work so tonight I was watching THE BEST FOOD I EVER ATE and someone mentioned

"Doughnut Muffins"

So I went searching and The Mama Foodie had already beat me too finding the perfect receipe so I used hers and made these YUMMY muffins. Now the disclaimer is that they really are the consistency of a doughnut not a muffin. They are super yummy but do take a bit of work.

So here are my pictures...

OH and it was my first time getting to use this! ;) I love this Kitchenaid Mixer... such a great blessing!

Final Product

Adapted from Doughnut Muffins by Kathleen Stewart/ Fine Cooking 42 pp.54-55

For the muffins:

12 oz. (24 Tbs.) unsalted butter, warmed to room temperature
1-3/4 cups sugar
4 large eggs
1 lb. 11 oz. (6 cups) all-purpose flour
1 Tbs. plus 2 tsp. baking powder
1/2 tsp. baking soda
1-3/4 tsp. salt
1 tsp. ground nutmeg
1-2/3 cups milk
1/4 cup buttermilk
For dipping:

4 oz. (8 Tbs.) unsalted butter; more as needed
1 cup sugar
1 Tbs. ground cinnamon

Instructions: (written for standard sized muffin pan)

To make the muffins

Put a rack in the middle of the oven and heat the oven to 350°F. In a stand mixer or a large bowl, cream the butter and sugar. Beat in the eggs, one at a time, until just mixed in. Sift together the flour, baking powder, baking soda, salt, and nutmeg. Combine the milk and buttermilk. With a wooden spoon, mix a quarter of the dry ingredients into the butter mixture. Then mix in a third of the milk mixture. Continue mixing in the remaining dry and wet ingredients alternately, ending with the dry. Mix until well combined and smooth, but don’t overmix. Grease and flour a standard-size muffin tin. Scoop enough batter into each tin so that the top of the batter is even with the rim of the cup, about 1/2 cup. (A #16 ice-cream scoop gives you the perfect amount.) Bake the muffins until firm to the touch, 30 to 35 min.

To finish

Melt the butter for the dipping mixture. Combine the sugar and cinnamon. When the muffins are just cool enough to handle, remove them from the tin, dip them into or brush them all over with the melted butter, and then roll them in the cinnamon sugar.

So they are done and I am going to turn off the BCS Game and head to bed. :) Sleep well everyone... and if I you want some muffins and are in the area we have PLENTY!

I LOVE this picture... it is from Wendi's baby shower 2 1/2 years ago and when I look at it and see the Joy in Wendi's eyes it still makes me smile. I was blessed to meet Wendi & John 3+ years ago when we attended the same church and also the same small group.

We had a wonderful small group and we all just seemed to mesh together well, it was mostly military(or former)couples/families with a few others as well. At the time I started attending this small group I had no idea that I would eventually be a military wife and I am thankful I got to see some of what that looks like from the families in the group, but I digress. (Chris also ended up attending this caregroup too!)

During our time as a group we watched many of the families grow, two of them by means of adoption. One of those couples was John and Wendi, the story of how God has worked things in their lives has been a wonderful thing to watch and to see them respond to. You can read about their family's story on her blog.

I am telling you about this couple because they have started a wonderful new ministry and are trying to get the word out. Because of Isaac is a ministry to raise funds to help couples with the high cost of adoption. Please check it out here and consider giving to this wonderful cause! :)

So many great things packed into this section of scripture. Today the part that has been sticking with me is that I am to "take every thought captive to obey Christ". Not just some but every... when my mind wanders to the things that I wish, I must take those thoughts captive and Obey. This is the key to peacefulness in my heart today and everyday. It doesn't mean that we aren't to think through things and process the things that are going on in our lives but it is to seek Christ in our thought processes as we do. Look for our opportunities to Obey God and to trust him in our circumstances.

We had been looking for the other 10 over the weekend but they seem to be gone as well. :( We think a bird or some other animal got them. We have moved... been in process for the past few weeks but the "big" move happened on Saturday (all our big furniture made it to the new house).

Now we are down to cleaning the old apartment and getting settled into "our" house which I am sure will take a bit of time, probably much longer than I would like!

Here it is, I especially like our kitchen and bigger master bedroom. It is so exciting to have our first house!

I am a little excited!!! (Understatement!) I get to go to the airport in just a few hours and pick up my awesome husband who has been away for the past 28 days. Can't wait to hug him and see his handsome face.

Okay a little mushy I know but I really am so excited for him to be home. I used the time he was away to organize and I am also excited about how our apartment looks, AND the weather this morning was SO great! Love those first feelings of fall in the air.

So to sum it up I'M SO EXCITED... (can't you hear me singing)

For any of you who have been around my blog for awhile this is not an unfamiliar face. Wayne was one of my bosses for many years here at WMC. Many of you have prayed for him and his family as he walked through a lot the past 2 years first with a heart attack and then a lung disease diagnosis that lead to a Lung Transplant last year. He lost his wife Charlene suddenly in May and now he is with her. Wayne passed away Monday. Please remember his family, friends and all those at the company here. It was unexpected to lose him just 4 1/2 months after Charlie but everyone could see how he missed her so.

I have missed his daily presence since he retired from the company last year. I'm Sad and I will miss him stopping into see us, he was a caring good man.

So as anyone who has read this blog knows it is Wedding Week for us. I am so excited!!!

Yesterday came a moment that I didn't totally expect, I guess over the past 16 years I had thought that I would be emotional about this aspect of my wedding but since we have been engaged I hadn't felt lacking in this area so it hadn't happened yet. Well yesterday it happened...

Let me start with this scene from the movie stepmom... it has always made me cry, now to be fair I am a crier anyway but this scene has special meaning as I have known for the past 16 years that my mom will not be there on my wedding day. As she has not been there for many other special days.

So here's what happened, yesterday I was sharing with Chris more about a conversation that I had with my dad last week. I had been trying to contact him since our engagement and was finally able to get a hold of him the day after his birthday. I didn't think he would be able to be here but I did want him to know that I am getting married. I do love my Dad and hope good things for him even though he has not been a part of my life through my adult years(but that is all quite another story for another day).

When I was talking to my dad and sharing that we were engaged on the 18th and getting married on the 18th he shared with me about when he and Mom got engaged that she wanted to get married on a 29th, the month didn't matter it just had to be a 29th and so they looked at the calendar and the 1st 29th was September. So that is the date they set. The 29th was a special date in my mom's family b/c it was my Grandparents anniversary and my Grandma's birthday are both on the 29th but I had never put the significance together.

As I was sharing this I started telling Chris that there are things that I wish I had known at 13-14 to ask my Mom. Things that she would have told me I am sure but neither of us knew there wouldn't be time to ask later. Things like what her pregnancies were like, and specifics about her wedding. Just those things a Mom can share. When I shared this I started crying, I wasn't expecting it but it came. Please don't hear what I am not saying, I am SO thankful for the amazing women that God has given me in my life who do share these things with me, but there is a part of me that still does miss hearing those things from her.

She loved us so much and wanted so many things for her kids. I was talking to someone a few days ago about losing my mom at a young age, they said to me there is no reason a child should lose their mom. I don't feel that way. God knows the plans He has for us. And His plans are GOOD. He has had an amazing plan for me, and I am so thankful for the person he has created me to be. I am the person I am not inspite of losing my mom but because of it. I believe that walking this beautiful road has made me more compassionate and loving towards others even when they may not always want it. I know how precious life is and I am so grateful for the life God has given me even the tough stuff. All the love that my Mom gave us is stored up and it is as much a part of me as everything else.

I think the crying suprised me because my life with her was so far removed from my life today. Although it is part of who I am missing her is not something I think about everyday.

Well I thought it was fitting to share a picture of my parents on their special day all those years ago...

Just as a side note I am SO SO SO Excited about the new "Mom" I am being blessed with. Chris' family is awesome and I am so thankful that God is giving them to me.

I wanted to remember this experience so I figured putting it here preserves the memory for me.

Single Digits

YAY! :) We are in the single digits till the wedding and things are looking great!

I haven't really been stressed throughout this process, YAY for short engagement.

I was told part of it is that I am task oriented too, I like checklists and marking stuff off so I have been looking at my list and making sure that things are checked off regularly. (I was also told this is probably why they like me at my job... I don't like leaving things undone... well something I guess.)

I am so excited for Family to start coming in (his and mine) in just a few more days and to get to enjoy time with them and the activities of the week, but oh so much more excited to be his wife :)

For the rest of this week we will be celebrating graduation!!! Can't believe Miss Sohpia is finishing her 3rd year here and graduating!!! So excited to celebrate with her, but also a little sad to see her go back home.

I love my military guy and I am amazed that He and so many others sacrifice so much for our freedoms that we can so easily take for granted everyday. So crazy that it is 1 month since we got engaged AND 1 month till we get married. I am so excited!!!

Planning has been going really well, I am amazed at how so many things have just fallen into place and so blessed by how supportive so many have been about the shortness of our engagement.

Honestly, I am so amazed at how God's hand has been on every aspect of this!

... heading to a funeral in a little while. Charlie Peters passed away last Thursday. This is Wayne's Wife. She was a sweet firey lady who kept working at WMC&T interesting. She loved me and was always happy for whatever God brought me in life. She served her husband and family heroically through Wayne's transplant, it seems like God allowed her to stay until he was healthy. She will be missed and she is so very loved. Please pray for her family and the WMC family today.

Wedding Date is set June 18th, 2010... yep that would be 49 days!!!

I know I have been horrible of posting details. I have typed up our proposal story and will get it on here soon. One of my SD cards from the weekend corrupted so I am trying to get the pics of that to share a couple of great pics from Friday night on the proposal story blog.

I am going to work on it this weekend and play catch up.

Another Recipe for Buffalo Chicken Tenders

Chicken tenders are marinated in hot sauce and then baked, rather than fried, in this low-fat version. Cool off these spicy chicken chunks by dunking them in a low-fat ranch dressing.Ingredients:

.3tablespoons Louisiana-style hot sauce
.1/2teaspoon paprika
.1/4teaspoon ground red pepper
.1 pound chicken tenders
.1/2cup fat-free ranch dressing
.1/4cup reduced-fat sour cream
.2 tablespoons crumbled blue cheese
.1 medium green or red bell pepper, cut lengthwise into 1/2-inch-thick slices

Preparation:
1.Preheat oven to 375°F. Combine hot sauce, paprika and ground red pepper in small bowl; brush on all surfaces of chicken. Place chicken in greased 11X7-inch baking dish. Cover; marinate in refrigerator 30 minutes.

2.Bake, uncovered, about 15 minutes or until chicken is no longer pink in center.

3.Combine ranch dressing and sour cream in small serving bowl. Serve dip with chicken and bell pepper.

Yummy Chicken and Brown Rice Soup

Been kinda sick so I decided to make some homemade soup... this is a recipe full of fresh veggies. Chopping the onions helped to clear my sinuses and the soup was yummy.
I don't usually like peas but since these were put in after the soup stopped cooking they didn't have a chance to get mushy.

2 boneless, skinless, chicken breasts
2 tablespoons olive oil
1 small onion, finely chopped
2 leeks (light green and white parts only) finely chopped
2 cloves of garlic, chopped
2 celery stalks, finely chopped
2 carrots, chopped
1/2 tablespoon fresh thyme, chopped
1/2 cup long-grain brown rice, uncooked
8 cups low sodium chicken broth (or more, if you'd like)
salt and freshly ground black pepper
1/2 cup frozen peas

Put the chicken breasts in a big pot and cover them with water. Add a tablespoon of salt, bring to a boil, cover, and let cook for 30-40 minutes. When the chicken is done, remove it from the pot and allow it to cool, then shred it with a fork.

Chop the veggies while the chicken is cooking.

Dump the water from the pot you used to boil the chicken. Put 2 tablespoons of olive oil in that pot, over medium heat, and add the chopped onion, leeks, and garlic. Cook until they start to soften, about 5 minutes. Then add the celery, carrots, and half of the thyme. Cook for another minute or two, then toss in the uncooked brown rice and stir until well combined. Add the broth and shredded chicken, then cover and simmer for 45-50 minutes, or until the rice is cooked.

When the rice is cooked, remove the soup from the heat, and stir in the frozen peas. Add salt and freshly ground black pepper to taste.

Makes 4-6 servings
